Description:
Thistles are in the sunflower family and a very close relative of the commercial artichoke. Thistle is a very common invasive weed throughout the United States. Thistle was introduced to North America from Europe and Asia where it is native. The roots, young shoots and flowers are edible. They are like mini artichokes. This plant makes a great survival food. Once well established they are very difficult to remove. Roots break off in the ground and come back every year. They spread roots deeper and wider each season making then nearly impossible to eradicate.
